Quinoa Greens

With busy college schedules thinking about getting home and making a healthy dish is probably the last thing in our minds. I have found that keeping pre-made quinoa and some frozen veggies makes life a lots easier. This is an easy and quick meal to prepare at anytime of the day for lunch or dinner.

 

Ingredients:
  • Quinoa
  • Broccoli (or any other veggies)
  • Avocado
  • Cherry tomatoes
Recipe
  1. Make quinoa just like you would make rice.
  2. Add one cup of quinoa with a bit of olive oil to the pan on medium heat
  3. Add two cups of water. This amount of quinoa will be enough to last for other meals
  4. On a separate pan on high heat, add olive oil and throw in your frozen or fresh veggies.
  5. Stir occasionally to flip the veggies around
  6. Once the quinoa is ready. Add it to your bowl
  7. Top the quinoa with veggies, avocado for some good fats and cherry tomatoes.
